How do you change the temperature on an accustat thermostat that is locked?

I believe those thermostats have a mercury thermometer (called a sensor) that makes the contact only on one setting. You will have to buy a different sensor for it for what ever setting you want.How do you change the temperature on an accustat thermostat that is locked?do you mean that it has an enclosure around it that is locked
