Rudd 40 gall Domestic Water Heater is it possible to replace the thermostat without having to change heater?

The problem is the heater will at times not heat the water and the only way I can burst it into life is to turn the thermostat scew behind the cover up and down then back up again and it will then produce hot water for a few days then pack up again

In that case, yes it is not only possible, but quite simple and inexpensive. If you do mange to get one, drain the water heater. Remove the pilot tube, main burner tube, and thermocouple. With a large pair of adjustable pliers or a large pipe wrench, unscrew the thermostat. Have the other thermostat already prepared with pipe lubricant and replace it.
